Mustard Pickles

I love mustard pickles but have never attempted them before, so last week, after numerous cancellations, Carla's beau and I made the pickles -we are the only ones in the family that eat them, I'm afraid everyone else doesn't know what they're missing - they're so good!!!  We bought so many cucumbers, we went crazy and continued on to make Millionaire's Relish - which turned out perfect too! Here's what everything looked like when it went in the pan.


The finished product - three jars each.


Mustard Pickles.

2 qt. cucumbers

1 1/2 qt. onions

3 red peppers

1 cauliflower

3/4 c. salt

4 c. white sugar

4 c. vinegar

3/4 c. flour

1/4 c. dry mustard

1 1/2 tbsp. tumeric

1 tbsp. celery seed

Chop cucumbers, onions, pepper and cauliflower.  Place in dish with 3/4 c. salt, cover with water and let stand 2 hours.  Drain and put in cooking dish.  Add 3 cups vinegar and 3 cups sugar, cook until hot.  Blend 3/4 cup flour, remaining cup of sugar, tumeric, celery seed and mustard with last cup of vinegar.  Blend into pickles.  Remove from stove as soon as they are thickened and seal promptly.

  2. Oh girl, that is one of my favorite recipes handed down from my mother. I don't make them often. Every ten years or so. lol! Seriously, that is true. Hubby doesn't love them like I do.
