Comfort Food - Baked Beans
Do you like baked beans? We do and now it's that time of the year again for comfort food - baked beans, casseroles - it all tastes so good when there's a chill in the air and feels so good going down! I don't make beans that often but when I do, it has to be yellow eye beans, they're the best! I used to bring them home from Prince Edward Island as we couldn't get them here in Ontario, I still do bring a few cans of yellow eye beans back for emergency meals but now we can get the bulk beans at Bulk Barn. I wrote away to the company that cans the beans a few years ago and they told me they were not available in Ontario because they were a "Maritime bean" - I never knew that!!
This is what has been stuck in one of my recipe books for years...
That's the recipe I use, (click on it to make it big) I make no changes and this is how they look... I find that with the more modern ovens, you don't have to cook them for 6-8 hours, maybe half of that.
They're so good with a nice brown bread and of course, they taste even better because they were made in Pyrex and look pretty nice in charcoal snowflake - don't you think?

I love baked beans, but most often eat them from a can. Shameful, I know! ;)
ReplyDeleteWell, I learned something new Jill. About yellow beans being a Maritime thing. I don't do baked beans but I enjoy eating them when someone else makes them and with home made brown bread on the side. I also like Lady Ashburnham pickles with them. :) Another Maritime tradition. Saturday night was always bean night when I was growing up and I liked ketchup on my Clark's tinned yellow eye beans. Now we eat the maple style ones.
ReplyDeleteI always do a little shortcut version on top of the stove but I think I'll try these in the oven when it cools off down here. I love beans and these look yummy! With a few BBQ beef ribs....oh my!

i looooooooove baked beans! my mom hates beans so i never had them until i was 16 at a friend's house for dinner. i can't believe i missed them all those years!
ReplyDeleteYummy yummy yum! That looks just like the recipe I use for Boston Baked Beans, but with a different kind of bean. I think mine uses red or kidney beans. And yes, they are that much yummier in Pyrex! Looks fantastic!
ReplyDeleteMy mom always made her baked beans in the big yellow pyrex bowl. I have never had the yellow beans, she always used navy beans or maybe red beans. I'll have to ask her, but I do remember them soaking and how good they smelled! Your pot of beans look divine! I'm glad to know modern ovens cook them in less time.
