Cranberry Orange Loaf

I didn't know that I would write about this loaf when I made it the other day, so there's only the after pictures and as you can see, it's half gone!  If you have a bag of cranberries around - give this loaf a try, it tastes even better the next day!

Cranberry Orange Loaf


1/4 cup margarine

1 cup white sugar

1 egg

Juice of 1 orange and water to make 3/4 cup

Put margarine, sugar and egg in mixing bowl.  Beat smooth.  Stir in juice.

2 cups all purpose flour

1 1/2 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

Grated rind of 1 orange

1 1/2 cups whole cranberries, fresh or frozen

1/2 cup chopped pecans or walnuts.

In second bowl measure in flour, baking powder, soda and salt.  Stir in orange rind, cranberries and nuts.  Empty all into batter stirring until moistened.  Scrape into greased loaf pan.  Bake in 350 oven for 1 hour.  Let stand 10 minutes.  Cool on rack.

  4. Does it matter if your loaf pan is "Lime Green" or Flamigo Pink?
    Will it affect the taste?
