Pumpkin Chocolate Chip Muffins
It seems I make the same kinds of muffins and nothing else - bran, banana chocolate chip and blueberry, the other day I branched out and made pumpkin chocolate chip muffins, oh, my, are they good!!
The recipe came from All Recipes but here it is anyway!
3/4 c. white sugar
1/4 c. vegetable oil
2 eggs
3/4 c. canned pumpkin
1/4 c. water
1 1/2 c. all purpose flour
3/4 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. cloves
1/2 tsp. cinnamon
1/4 tsp. salt
1/4 tsp. nutmeg
1/2 c. chocolate chips (I added more)
Preheat over to 400. Grease and flour muffin pan or use liners
Mix sugar, oil, eggs. Add pumpkin and water. In separate bowl, mix together flour, b. soda, b. powder, spices and salt. Add wet mixture and stir in chocolate chips.
Fill muffin cups 2/3 full with batter. Bake in preheated oven for 20-25 minutes.
I could have made a double batch and froze them, but I wanted to try them first, so I'll definitely be using up more from the big can of pumpkin!!
I have a bunch of frozen pumpkin in the fridge (scored a free pumpkin from my grocery store on Nov 1) and all the ingredients...I see these muffins as a nice afternoon snack!
ReplyDeleteI'm sure you'll enjoy them!!!!
DeleteI'm not the biggest pumpkin fan, but I've had pumpkin chocolate chip cookies before... and I loved them... so I bet these are just as good. I hope to try this out soon with my big can of pumpkin that I have in the pantry!
ReplyDeleteI just bet you'll love them, Melissa!!
