Easy Coconut Shrimp

If you like shrimp, there's a good chance you love coconut shrimp too - it's just so delicious!!  It's always good in a restaurant and I'm not ashamed to say, I've bought frozen coconut shrimp in a box!! I won't be buying it any more, not after trying this recipe. I pinned it today on Pinterest and tried it that quickly and now, I am blogging about it just as quickly!!  Click right here and you can see the original recipe on Sallys Baking Addiction.

Easy Coconut Shrimp

1/3 c. all purpose flour

1/2 tsp. salt

1/2 tsp. pepper

2 large eggs, beaten

3/4 c. Panko bread crumbs

1 c. sweetened shredded coconut

1 pound raw large shrimp, peeled and deveined

Vegetable oil or coconut oil

Start with 3 medium bowls.  Combine flour, salt & pepper in one.  Beat the eggs in the second bowl.  Combine Panko and coconut in third bowl.

Dip the shrimp into the flour, then the eggs, then dredge the shrimp into the coconut mixture, pressing gently to adhere.  Get as much coconut on as you can.  Place on a platter while you continue the dipping process.

Add enough oil to cover the the bottom of a large skillet, mine was large enough that I could cook them all at once.  Then, just fry as you would any shrimp.

Those morsels are delectable!!  You can dip them with a sweet chili sauce or a sweet & sour sauce, which is what we used.

I have made coconut shrimp before in the oven, they were drier and the coconut tended to fall off, this recipe is way better and so easy!!  We loved them - I'll be making them again!!

August - October

The months from August through October for me have a lot of significant dates.  My children were born in August and September and my husband in September - that's a lot of birthdays real close to together - Darcy and Gary are only five days apart.

We celebrated one of those birthdays here at the house in August, Carla was the first of the birthdays!

Then we went home to Prince Edward Island and  I didn't get a chance to acknowledge the anniversary of my parent's passing - how has the time gone so fast, Dad passed away on August 25, 2007 and Mom two years ago on August 16.  I'll miss them always...

Today marks the passing of my mother-in-law - two years for her as well - that was a terrible few months, with both of our mothers passing away in just over a month!   

But, we remember all the good times we shared - like Darcy's first Christmas!   

Then, it's our anniversary on October 3 - it was a miserable few days leading up to the big day, but the sun shone by the time we got to the church.  Here we all were...

Next big event to think about will be Christmas!!!  I actually picked up a couple of items last week....

The Good Housekeeping Home - 1971

This post did not turn out the way I wanted it too, my plan was to share some advertisements pertaining to fall from my vintage magazines - but, I don't seem to have that many fall issues and there sure aren't many fall related ads in the ones I have.   So, the topic changed to household ads from my Good Housekeeping, October, 1971 issue.

The 70's take us back to all those wonderful colours - and to get that mod colour for your kitchen, all you had to do was buy a package of Rit.

Maybe you were already set up in a kitchen that looked like one of these...

What kitchen is complete without a mixer?  And, what an offer, buy a mixer, send away for a shaver!!  

I'd love to have one of these pots!  Who knew you could send away for these beauties?  There were so many mail in offers in the magazines back then - here's a post I did on that very topic back in July.

No kitchen would have been complete without Palmolive- who can forget "Madge"

I think this is a color we all identify with the 70's.  I don't remember anything around home in this colour though, our kitchen appliances were brown!

I wouldn't mind having this ironing board cover right now.  I am on the hunt for a new one and it's not going well, any store I've checked has very few and they are either plain or striped - don't they make pretty ones anymore?

I don't know anybody that had a livingroom that looked like this, everything was brown, gold or rust where I lived!!

There was just no end to the things you could send away for.  I had to include this embroidery one because I actually did the fall scene, way back then, and gave it away as a gift!!

This was a great deal..we all belonged to a record club of some sort!!

There's those colours again.

The bathroom could be quite mod too... Hey Fatso, now, that's quite the pair of scales!!!  Once again, something else to send away for, your mailbox could be full!!!

I'm including a couple of food advertisements as well, I remember  Mom making upside down pineapple cake every time we would go to visit my grandmother, I never liked it, I don't think I've had it since the 70's, maybe it would taste better to me now.

Space Food Sticks - I've never heard of these but then, we probably didn't have these in Canada..

One thing that's still going strong - Kraft Macaroni and Cheese  - but named Kraft Dinner here in Canada!!

These posts always take a while to work on but they're fun, times have changed but then in other ways, things are still the same - like Kraft Dinner!!!

Banana Chocolate Chip Muffins

My intention this morning was to make a zucchini loaf, I already made one and it was delicious, I had the zucchini to make another one but no can of crushed pineapple.  I didn't want to run out to the store, when you're in the mood for baking, you just want to get started, so I made muffins instead - those three speckled bananas were begging to be used!!

My husband picked up this cookbook for me a few years ago, it has the best "Banana Chocolate Chip Muffins" - it's the one I always make!

Banana Chocolate Chip Muffins

3 large bananas, mashed

1/4 cup butter/margarine, softened

1 cup white sugar

1 egg

1 tsp. vanilla

1 1/2 cups flour

1/2 tsp. salt

1 tsp. baking powder

1 tsp. baking soda

1 tsp. cinnamon

1 cup chocolate chips

Combine sugar and margarine, blend well.  Add egg, mashed bananas and vanilla.  Fold in dry ingredients.  Add chocolate chips.  Bake at 375 for 20 minutes.  

Hot out of the oven...

Eat them with a speck of butter or plain - either way, they're delicious!!!

More Vera for Me!!

I don't usually do an entire post on finding Vera scarves but I am today because in the past week I've found seven vintage Vera scarves - that brings my collection up to two hundred and fifty one scarves!  I'm thrilled to find that many, I just have to share!!

I hadn't been to the local thrifts in a month since I'd been away, they must have been waiting there just for me.

Four beauties at the Salvation Army - $1 each.  I love to find those big bold geometric patterns.

At the other thrift down the road, I found two more, I couldn't believe my luck.  This was crazy, I only paid 25 cents each!!!

I was away this past weekend, no trip away is complete without getting to a thrift or two - I was rewarded at a Value Village with this cute piano key scarf - I paid $2.99 for this one, still that's not a bad price.

My week was complete - it makes me happy when I come out of a thrift with some Vera!!

Vintage from Home!

I said I would share some things I brought from my PEI house in the last post, so here they are.

Finally, we had enough room in the car to bring back these radios - I've wanted to drag them home for a while and I've placed them on a corner shelf already.  I thought I had them cleaned up nicely but after taking these pictures, they might need a little more work!!

I remember this was placed on top of the fridge - no, it doesn't work and the other one definitely doesn't work!

Dad must have picked this up from some relative, I never saw it before.  I'm pretty sure it's a Bakelite radio - love it!!

I've wanted to bring this flower bowl back for a while too, I so wanted to put some pansies in it because I remember Mom doing that, sadly, my pansies didn't make it when I was away!!   I looked this piece up in Mom's trusty Depression Glass book - the true name is "Old Colony" but also called "Lace Edge".  There's a little bonus with that, another little glass frog was inside it.  This pattern was made from 1935-1938.

Sometimes you recognize things that other people find and post - that was the way with these plastic plates, as soon as I saw them I knew we had them!  They were still there -   I found them packed away in a box with some ornaments.  Don't they really look like glass?  They're really delicate!!!

Neighbours of ours gave me this for Christmas in 1974 - I wrote it on the little tag - she plays "Somewhere my Love" - why I have left it there all this time, I don't know.   I always thought she was so pretty and notice it's a Josef!

What was the sense of leaving my little Easter cup  - it's here and ready for next Easter now..

Mom kept a lot of my things from when I was small, this is something else that I thought was still around - I just bought a few pieces - my tin play dishes.

Yes, these are my squeak toys - I think I  must have liked cats way more than I do now, his ears and tail are chewed up pretty good!!

Now that I've blogged about it all, I can put it away!!!

Things I Found in the Maritimes

I'm back from holidays and it's back to all things normal now  - back to the old routine.  I wouldn't mind at all to still be on Prince Edward Island - walking the beach for seaglass - oh, well, I'll be back next year!!!  I didn't even read a blog post the whole time I was away, Instagram was pretty well all I paid attention to in the cyberworld, because I like it so much!!

We timed our trip for Eastern Canada's largest flea market with up to 900 vendors and 1,000 tables - it all takes place in Sussex, New Brunswick, we had been there years and years ago but it has surely grown since then.  We walked around for a couple of hours, Gary picked this Santa up right away for $2, then he had to carry that around for the rest of the time.

He was starting to feel bad for me because there was just nothing I saw that I wanted to buy - we were ready to leave and went down one more row - there was a big Pyrex display -there were a lot of pieces, but at this stage of my collection, I don't need much but I've been wanting these for ages - I bought them both for $25.

My lucky day- Golden Poinsetta which was a holiday promotional in 1961.  Neither one had lids but that didn't matter to me.

The Holiday casserole has a few scratches on it but that didn't stop me - I have never seen these pieces before for a price I could afford, I'm so happy to find them.  The flea market was worth it, after all.

I found a little pink elephant glass too for 25 cents!!

We were out touring one day on Prince Edward Island, there is one area that has four or five antique shops, most of it way too expensive for me.  But, I managed to get something.

These Made in Japan pixies were marked at $3 each, I got up to the cash and noticed the guy on the left was missing part of his ear - they were mine for $3 total. They're so cute!!

These are just perfect - they look like something from Japan as well - $2.

Another Christmas book for those future grandchildren.

Of course, there were Vera's - at one thrift I found four and that day they were half off - I love that place!!!

I brought a few things back from the PEI house too - I'll share those in another post.
